CHEESY SCALLOPED POTATOES 
1/2 c. chopped onion or 3 tbsp. dried minced onion
4 tbsp. butter
4 tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
2 1/2 c. milk
2 c. mild Cheddar cheese
6 med. potatoes, peeled and thinly sliced (6 c.)

For Sauce: Cook onion in butter until tender. Stir in flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add milk, all at once. Cook and stir until thickened and bubbly. Stir 1 1/2 cups shredded Cheddar cheese into thickened sauce until melted. Remove from heat. Place half the sliced potatoes in a greased 1 quart casserole. Cover with half the sauce. Repeat layers.

Bake, covered, in a 350 degree oven for 35 minutes. Uncover; bake 30 minutes more or until potatoes are tender. Sprinkle 1/2 cup shredded Cheddar cheese over top. Let stand 5 minutes. Serves 8.
