SWEET POTATO CAKE 
1 1/2 cups vegetable oil
5 eggs
2 cups sugar
2 1/2 cups sifted cake flour
4 tbsp. hot water
1 tsp. nutmeg and 1 tsp. cinnamon or 2 tsp. pumpkin pie spice
1/4 tsp. salt
1 tbsp. baking powder
1 cup chopped pecans
1 1/2 cups raw sweet potatoes, grated
2 tsp. vanilla

Beat oil, sugar and egg yolks until smooth. Add hot water. Combine dry ingredients and sift into sugar mixture. Stir in pecans, potatoes and vanilla, continuing to blend. Beat egg whites until stiff and fold into mixture.

Bake in a greased, shallow pan at 350°F for about 30 minutes.
