COTTAGE CHEESE PIE 
1 carton sm. curd cottage cheese, drained & rinsed
3 eggs, separated
1 tsp. vanilla
1 tbsp. flour
Pinch lemon rind
1/3 c. sugar

Mix cheese, egg yolks, vanilla, flour, lemon rind and sugar together. Set aside. Beat whites until stiff and fold into cheese mixture. Pour into your favorite unbaked pie shell. Crush graham cracker and sprinkle over top of pie. Bake at 375 degrees for 45 minutes.
