EGGPLANT PARMESAN 
1 eggplant
2 egg whites
10-20 crushed Ritz crackers
Sliced Mozzarella cheese
Spaghetti sauce (optional)
3 tbsp. olive oil (or vegetable oil)

1. Peel and slice eggplant.

2. Dip the slices of eggplant into the egg whites and turn into the crushed Ritz crackers (both sides) to brown.

3. Fry in olive oil on medium high h eat, turn once (takes 3-4 minutes total).

4. Cut sliced Mozzarella to fit size of sliced eggplant. Put in microwave to melt (approximately 1 minute). May also be done in pan on stove.

5. Top with warm spaghetti sauce, if desired.

6. Serve warm. Enjoy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
