EGGPLANT PARMESAN 
Eggplant
Spaghetti sauce (with meat)
Mozzarella cheese

Peel eggplant and slice very thin. Lay slices on a paper towel on a cookie sheet, layer. Leave slices for 2 hours.

Bake slices 10-15 minutes, then layer in baking dish in the following order: eggplant, Parmesan, Mozzarella, spaghetti sauce. Repeat layers as necessary. Bake 350 degrees 45 minutes to 1 hour.
