EGGPLANT PARMESAN 
1 lb. sausage
2 lg. onions (2 c. chopped)
1 clove garlic, minced
1 (2 lb. 3 oz.) can tomatoes
1 can beef broth
2 tbsp. water
2 (8 oz.) mozzarella cheese
1 lg. eggplant
3/4 c. bread crumbs
1/4 c. parsley
2 eggs
1 env. spaghetti sauce mix
1/2 c. oil
3/4 c. Parmesan cheese

Brown sausage (uncased); saute garlic and onion. Stir in tomatoes, beef broth and spaghetti sauce. Simmer 20 minutes.
