EGGPLANT PARMESAN 
1 lg. eggplant
2 c. flavored bread crumbs
1 jar spaghetti sauce
1 pkg. grated Mozzarella cheese

Heat oil in skillet. Peel eggplant, cut in 1/2 inch slices. Dip in egg and then bread crumbs. Fry in skillet long enough to brown on each side. Set on paper towel to drain. Line bottom of 9 x 12 casserole dish with eggplant. Cover with spaghetti sauce. Bake in 325 degree oven for 20 minutes. Cover with Mozzarella cheese return to oven until cheese melts.
