SPANAKOPITA (SPINACH PIE) 
2 lb. spinach
10 pastry sheets
1 med. onion, chopped fine
3 tbsp. butter
3 tbsp. olive oil for topping
2 c. chopped Feta cheese
7 eggs
1/2 c. olive oil
Salt and pepper

Clean and wash spinach thoroughly. Cut into 2-inch pieces. Drain and place in bowl and rub 1 tablespoon salt into spinach leaves with hand until it is all well covered. Let stand 15 minutes. Drain well for 30 minutes.

Brown onion lightly in hot olive oil. Beat eggs well and add eggs, cheese and onion to spinach in large bowl. Salt and pepper to taste. Place 5 pastry sheets into pan, brush each sheet with butter.

Spread spinach mixture, then place 5 additional sheets on top. With sharp knife, cut through the top 5 sheets in three places. Bake at 375 degrees for 50 minutes. Cut into squares and serve hot. Serves 15.
