SPINACH PIE SPANAKOPITA 
2 lbs. spinach (washed, drained, chopped and stems discarded)
1/2 lb. butter
4 eggs
Pinch of parsley
1 lb. cheese (half feta, half cottage)
Salt (optional)
Minced onion to flavor
1 tsp. dill
1/2 lb. Athen's Filo
1 stick melted butter

Mix first 8 ingredients together. Butter the bottom of a 9x13 inch baking pan. Place 4 filo leaves on the bottom, buttering after each. Place half of spinach mix on filo leaves and then place 4 more filo leaves on top of spinach, buttering each leaf. Place remainder of spinach on top and cover with one more filo leaf.
