YUMMY PANCAKES 
1 1/8 c. milk
1 c. rolled oats
2 eggs
2 tbsp. oil
1/2 c. whole wheat flour
1 tbsp. dark brown sugar
1 tsp. baking powder
1/4 tsp. salt

Mix the rolled oats in the milk and let stand five minutes.

Beat eggs. Add oil, flour, sugar, salt and baking powder and stir until ingredients are moistened.

Bake on a lightly oiled, hot griddle. Turn pancakes when the top is bubbly and edges are slightly dry.

Serve with applesauce or a fruit and yogurt mixture.

Makes 6 (3-inch) pancakes.
