BANANA OATMEAL COOKIES 
2 c. flour
2 tsp. baking soda
1-2 tsp. cinnamon
1 c. apple juice (concentrate)
1/2 c. skim milk
3 bananas, mashed
Chopped raisins (optional)
3 egg whites, lightly beaten into soft peaks
4 c. (1 minute) oats
Non-stick cookie trays

1. Sift dry ingredients into mixing bowl.

2. Add juice, milk and bananas.

3. Mix well - add raisins.

4. Add oatmeal.

5. Fold in egg whites.

6. Spoon on cookie sheets. Bake at 400 degrees for 8-10 minutes. (Makes a large batch.

COOL ON WIRE RACKS - DO NOT REMOVE FROM PAN UNTIL SET. (They glaze on bottom - pick up with fingers). Store in covered container - they dry out. Cookies freeze well.
