CAPIROTADA (MEXICAN BREAD
PUDDING)
 
1 qt. water
2 c. crushed brown sugar
6 cloves
1/4 c. fresh cilantro
1/4 c. green onion tops
2 loaves crisp French bread
Butter
2 c. raisins
3 c. grated Jack cheese
Cooked chopped apple (optional)
Chopped peanuts (optional)
Sliced banana (optional)

Bring water to boil and add brown sugar and cloves. Tie cilantro and green onion tops in cheese cloth (to remove later) and add. Boil 15 minutes until syrupy. Slice bread. Butter and toast bread. Line buttered baking pan with bread, cover with some raisins and cheese, apple, peanuts. Drizzle with syrup. Repeat layers, ending with cheese. May top with banana. Cover with foil. Bake 30 minutes at 325 degrees. Serve with cream over it.
