PINEAPPLE UPSIDE-DOWN CAKE 
Cake
Pineapple juice and water to make 2/3 c.
1/2 c. butter
3/4 c. sugar
2 tsp. vanilla
1 egg
1 1/2 c. all purpose flour
2 1/2 tsp. baking powder
1/4 tsp. salt

TOPPING:

2 tbsp. butter
1 tbsp. pineapple juice
1/2 c. firmly packed brown sugar
1 can pineapple rings or crushed pineapple
Maraschino cherries

Mix butter, sugar until fluffy, add egg and vanilla. Mix well. Mix flour, salt, baking powder, divided into 3 parts. Add 1/3 of flour mixture and 1/2 of water and juice mixture, end with the flour mixture. Mix well. In cast iron pan over low heat add 1 tablespoon juice, 2 tablespoons butter, 1/2 cup brown sugar. Lay pineapple rings into bottom of pan on brown sugar mixture, pour batter over top. Bake at 350 degrees for 30-40 minutes. Remove from pan as soon as its done. Place cherries in center of each pineapple ring.
