CLAM CHOWDER | |
3 (6 1/2 oz.) cans minced clams 1/2 c. onions, finely chopped 2 c. celery, finely chopped 4 c. potatoes, cut in sm. cubes or 2 lb. bag frozen OreIda hash browns 1 1/2 tsp. salt Dash of pepper 1 tsp. sugar 3/4 c. butter 3/4 c. flour 1 qt. (4 c.) half and half or evaporated milk (2 cans + water to make a quart) Put all vegetables in large pan. Drain juice from clams onto vegetables. Add enough water to barely cover vegetables. Cook until potatoes are tender (not mushy). Add salt, pepper and sugar when cooking vegetables. Meanwhile, melt butter. Add flour and blend well. Cook a couple of minutes. Put in blender, add milk, blend until smooth. Put in in vegetables when they are tender. Cook until thick or put in crock pot and simmer. Can cook in crock pot on low for many hours. If it will cook all day, don't cook potatoes completely in the beginning so they won't get mushy. |
