HASH BROWN CASSEROLE 
2 lb. pkg. frozen hash brown potatoes
1 onion, chopped
1 stick butter
1 pt. sour cream
2 c. shredded cheddar cheese
1 can mushroom soup
Salt & pepper to taste

Saute onion in butter. Mix hash browns and sour cream with onions and butter. Mix in mushroom soup. Put in a 13"x8"x2" casserole dish or pan which has been lightly greased. Bake in 350 degree oven for about 1 hour. Place shredded cheese on top and bake until cheese melts.
