BRUNCH CASSEROLE 
2 c. frozen hash brown potatoes
1 c. Cheddar cheese, shredded
2 tbsp. onion, chopped
1 lb. sausage
1 (4 oz.) can mushrooms
4 eggs
1/2 c. milk
1/2 tsp. salt
1/4 tsp. pepper

Thaw potatoes and put into a greased, 8-inch baking dish. Top with cheese and onions. Brown sausage, drain and crumble. Spread over cheese. Top with mushrooms. Mix eggs, milk, salt and pepper; pour over mixture. Bake at 350 degrees for 30 minutes.

Excellent recipe but it always takes longer than 30 minutes- more like 50 minutes and I turn the oven up to 375°F. (My oven bakes fine for all my other recipes.)
