“OVEN ROASTED RED POTATOES” IS IN:

OVEN ROASTED RED POTATOES 
2 lb. red potatoes, washed and cut into 1 inch cubes
1 tbsp. basil
1 tbsp. thyme
1/2 cup olive oil
1 cup Parmesan cheese
2 teaspoons seasoned salt
pepper, to taste

Preheat oven to 425°F.

Place potatoes in a casserole dish and drizzle with olive oil. Add spices to coat potatoes. Stir potatoes around.

Place half of the Parmesan cheese on the potatoes and place in the oven for 30 minutes.

Check potatoes, stir (add more olive oil if the potatoes are getting dry) and add remaining Parmesan cheese. Return to oven for 30 minutes or until they are roasted to the desired color and texture.

Let stand for 3 minutes and serve warm.

My first time roasting potatoes (red). I boiled them for 5 to 8 minutes, poured potatoes into a bowl with olive oil, baby carrots and parsley, a little old bay seasoning and salt, transferred to a casserole dish and popped in the oven. Can't wait til done.

i make a variation of this more oil,i like to throw whatever spices or seasonings ,chile garlic adobe etc.also baby carrots oil well dust with spices mix repeat dusting 2-3x into bakingdish pour remaning gloup over top cook as above or till tender my kids luv this i know the oil is alot but once in awhile o well

Omigod. Yum. I left out the basil the thyme and used Old Bay Seasoning and 3 cloves of garlic, pepper and salt. This is an amazing dish that I will use over and over again!
