CHICKEN AL'ORANGE 
1 (3 lb.) fryer, cut up
1/2 c. butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. brown sugar
1/2 tsp. ginger
1 1/2 c. orange juice
1 1/2 c. water
1/2 tsp. Tabasco
1 unpeeled orange
3 med. sweet potatoes, cooked and sliced

About one hour before dinner: sprinkle fryer with a little salt and paprika. Brown on all sides in the butter in a large skillet. Remove chicken. Into the butter remaining in the skillet, stir in flour, salt, pepper, brown sugar and ginger; stir until smooth.

Slowly add orange juice, water, Tabasco; cook, stirring constantly, until mixture thickens and comes to a boil. Add chicken; cover; simmer for 30 minutes. Quarter orange into one half inch slices. Add to chicken; add sweet potatoes; cover and simmer 15 minutes or until chicken is tender. Serves 6.
