CAROLYN'S CHICKEN STEW | |
3 1/2 c. water 1 whole chicken (cut) 2 1/2 c. carrots 2 1/2 green beans 2 c. corn kernels 5 peeled white potatoes 1 c. celery chopped 1 c. sweet peas 1 onion 3/4 c. parsley 1 can small red beans 1 pkg. frozen okra 1 tsp. black pepper 1 tsp. flour 1 tsp. salt 3 chicken bouillon cubes Cook chicken 20 minutes in 3 cups of water until tender add all vegetables with onions and parsley cook until vegetables are tender, add small red beans with 1/2 c. water and flour to thicken add frozen okra plus 3 chicken bouillon cubs black pepper, salt. Serve over rice. Variation: Add egg noodles, in place of beans or beef instead of chicken, can vegetables are good but fresh is better. |
