CHICKEN-MANDARIN SALAD 
Daytons (you knew this name would show up in my book somewhere) Restaurant at Burnsville was the only place I could order this; they no longer have a restaurant and I loved this salad, so I re-created it!

Lettuce for salad
Mandarin oranges
Cold grilled chicken, diced
Water chestnuts, sliced
Crisp thick-sliced bacon, broken up
Scallions, sliced
Pimento
Frozen snow peapods, thawed
Sliced almonds
Sesame seeds

Mix all ingredients; serve on dinner plates topped with Chinese crispy thin noodles and a sweet-sour honey/sesame seed dressing found in grocery stores (I add a little more honey and sesame seeds.) Delicious with miniature muffins (banana, apple, blueberry, poppy seed or bran).
