TEX - MEX DIP 
3 ripe avocados (peeled & mashed)
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 c. sour cream
1/2 c. mayonnaise
1 pkg. taco seasoning mix
3 med. tomatoes
1 (10 oz.) can refried beans
1 bunch scallions, chopped
1 lg. can sliced black olives
3 oz. shredded cheddar cheese
Nacho chips

In a bowl mash peeled avocados. Add lemon, salt and pepper. In a second bowl combine sour cream, mayonnaise and taco seasoning. Mix well.

On a large platter begin layering with beans on the bottom. Follow with avocado mixture, sour cream mixture, tomatoes, scallions, cheddar cheese and olives.

Serve with nacho chips. Can also be served with a medium or hot salsa.
