MOM AUSTIN'S COTTAGE CHEESE AND
BEEF CASSEROLE
 
2 c. uncooked noodles
2 med. onions, sliced
1 tbsp. butter
1 lb. ground beef
1 c. cottage cheese
1 c. milk
1 can cream of mushroom soup
1 1/2 tsp. salt
1/2 c. grated cheese (Mozzarella or Monterey Jack)
2 eggs, beaten

Cook noodles in boiling water until barely tender. Drain and rinse. In a large skillet, brown onions in butter until light yellow; set aside. In same skillet, brown beef, stirring to break into small pieces and changes color. Add onions and cottage cheese. In 2 quart casserole, arrange noodles and meat; repeat. Be sure there are some noodles on top. Combine milk, soup, and salt. Pour over casserole. Sprinkle cheese over top. Pour beaten eggs over cheese. Bake at 375 degrees for 1 hour. Serves 8 to 10.
