COTTAGE CHEESE - SPINACH
CASSEROLE
 
1 pt. Farmer-style cottage cheese
3 eggs, beaten
3 tbsp. flour
1/4 lb. American cheese, cubed
1 pkg. frozen chopped spinach
2 to 3 tbsp. butter
Dash of salt

Mix together cottage cheese, eggs and flour. Add American cheese. Allow spinach to thaw until it can be broken apart in chunks. Add frozen chunks to mixture. But butter in pieces and combine with mixture. Add salt. Bake uncovered for 1 hour in a 350 degree oven. If doubling recipe, allow 2 hours for baking in a deep casserole.

Serves 4.

I always double the recipe. It looks prettier when first served in that amount, and leftovers warm over beautifully.

The above recipe is similar to a quiche. It looks beautiful after it has been baked, and I have not found one person who has not liked it.

My daughter uses 6 oz. raw chopped spinach and bakes it for less time...it is to 'die' for!!!
