EVERLASTING APPLE MUFFINS | |
1 c. butter 2 c. sugar 2 eggs 1 c. chopped nuts (optional) 3 tsp. cinnamon 2 tsp. baking soda 1 tsp. allspice 1/2 tsp. salt 4 c. plain flour 2 c. applesauce Cream butter and sugar. Add eggs, nuts, cinnamon, soda, allspice and salt; mix well. Add flour and applesauce, mixing thoroughly. Fill greased muffin pans about half full. Bake at 350 degrees for about 15-20 minutes or until done. The batter will keep for 6 weeks in the refrigerator and can be used as needed or all muffins may be baked and frozen. This recipe will make 40-50 muffins. |
