QUICK TURKEY SALAD 
2 c. cooked turkey breast, cubed
3/4 c. celery, finely chopped
1/2 c. ripe olives, halved
1/2 c. mayonnaise
1/4 c. fresh leeks, sliced thin
1/4 c. slivered almonds

Lightly toss all ingredients except almonds until evenly coated with mayonnaise. Chill. Serve on lettuce or hollowed fresh tomato. Top with slivered almonds.

Serves 4 to 6.
