BREAKFAST PUFF 
3 lg. eggs
1/2 c. milk
1/2 c. all-purpose flour
Pinch nutmeg or cinnamon
Pinch of salt
1/2 tsp. granulated sugar
1 tbsp. unsalted butter
Confectioners' sugar
Maple syrup
Fruit filling (if desired)

Combine eggs, milk, flour, cinnamon, salt, granulated sugar. Mix well. Melt butter in pan or popover tin. Remove from heat. Pour in batter.

Bake 15-20 minutes at 425 degrees or until puffed and golden brown. Sprinkle with powdered sugar. Serve with syrup and fruit filling (if desired).
