CARROT-RAISIN BROWNIES 
1 1/2 c. light brown sugar, packed
1/2 c. butter, softened
2 eggs
1 tsp. vanilla
1 1/2 c. flour, unsifted
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 c. raisins, chopped
1 1/2 c. carrots, finely grated
1/2 c. walnuts, finely chopped

Preheat oven to 350 degrees. Grease a 9 x 13 inch baking pan. Mix sugar and butter. Add eggs and vanilla, beat. Stir in dry ingredients. Add raisins and carrots; stir. Spread mixture into baking pan and sprinkle with nuts. Bake about 40 minutes or until a toothpick inserted in center comes out clean.

Cool and cut into squares. Makes 24 brownies, 2 x 2 1/4 inches each. Calories per brownie - about 150.
