MINTY SUGAR COOKIES 
1 c. (2 sticks) butter, softened
1 1/4 c. sugar
1 lg. eggs
1/2 c. sour cream
1/4 tsp. mint extract
1/4 c. minced fresh mint leaves
4 c. unsifted all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
Sugar
Unblanched almond slices (optional)

1. Beat at medium speed, butter, 1 1/4 cups sugar and egg until light and fluffy. Add low speed, beat in sour cream and mint extract until smooth. Beat in mint leaves.

2. Gradually beat in 2 cups flour, baking powder, soda and salt, beating until well combined. With spoon, stir in enough remaining flour to form a stiff dough. Divide dough into 4 equal parts, wrap in plastic wrap. Refrigerate several hours.

3. Preheat oven at 375 degrees. Roll dough 1/4 inches thick. Place almond slices in center. Bake for 8-10 minutes. Makes 4 dozen.
