BRAN MUFFINS 
1 1/4 c. all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
4 pkgs. Equal
1 c. Kelloggs All-Bran cereal
1 c. milk
1 egg (sub. 1 scramble or egg beater)
3 tbsp. Crisco
1 c. raisins (opt.)

Sift together flour, baking powder, salt and Equal. Set aside. Measure All- Bran and milk into large mixing bowl. Stir to combine. Let stand 1 to 2 minutes or until cereal is softened. Add egg and oil, beat well. Add raisins.

Add flour mixture, stirring only until combined. Portion batter evenly into 12 muffins. (Spray muffin pan with Pam.) Bake at 400 degrees for 25 minutes or until lightly browned. Yield: 12 muffins.
