OAT BRAN MUFFINS 
2 c. Kellogg's All Bran with extra fiber
1 c. whole wheat flour
1 1/2 c. oat bran
1 1/2 c. oats (uncooked)
1 tbsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1/2 c. sugar
1/2 c. brown sugar
4 tbsp. vegetable oil
2 eggs (or 3 to 4 egg whites)
1 tbsp. cinnamon
2 c. skim milk
2 c. applesauce
2 mashed bananas
2 c. raisins
1 c. pecan chips

Mix all dry ingredients except for cereal. Set aside. Soak bran cereal in milk until soft (about 5 minutes). Add eggs and oil. Mix fruit and nuts together and add bran mix. Fold in dry ingredients. Bake 20 to 25 minutes at 400 degrees.
