“CHEWY PEANUT BUTTER COOKIES” IS IN:

CHEWY PEANUT BUTTER COOKIES 
1 cup (2 sticks) butter, softened
1 cup peanut butter
1 cup sugar
1 cup brown sugar, packed
2 eggs
2 cups all-purpose flour
1 tsp. baking soda
6 oz. chocolate or butterscotch chips (optional)
1/2 tsp. vanilla

Combine butter, peanut butter, sugars and eggs. Stir in baking soda and flour and remaining ingredients. Mix well and drop by the teaspoonful onto a cookie sheet, leaving 1-inch space between cookies.

Bake in a preheated 325°F oven for 10 minutes or just until set (depends upon size of cookies).

Remove to wire rack to cool. Store in refrigerator for best taste.

Makes about 50 cookies.

Very good recipe. I really enjoyed it. I changed the recipe by cutting up one ounce semi-sweet bakers chocolate instead of chocolate chips and they turned out great. Very easy to make. Thanks for this recipe!

EXACTLY WHAT I WAS WANTING!!! COOKIEEEEEES!
So, here's the story...
Well, I was sittn' there wishin' I had some old fashioned peanut butter cookies... but, I didn't want to wait 2 hours for 'em - so I typed in quick & easy peanut butter cookies & Voila! Then, I followed the recipe, except I left out the choc, just wanted peanut butter this time. I also didn't want the mess to clean-up... so I mixed it all up in a zip bag. Stuck it in the fridge for about 20 mins. that's all I could wait... balled 'em up, smushed 'em out & baked 'em at 350°F for about 20 mins. Perfect - YUM!

I made this recipe twice.. first time I used all the ingredients.. and found the cookies were a little thinner than I wanted them to be.. that could be because of the age of my baking soda.. I don't know. But they were still delicious. 2nd batch, I left out the baking soda.. adjusted the cooking time and temp and they were plump and soft.. perfect.. Thanks for the recipe! It's a keeper for days I need a quick cookie snack for the kids!
