OAT BRAN MUFFINS 
1 c. milk
2 egg whites
2 tbsp. oil
1/4 c. brown sugar
2 1/2 c. Oat Bran (or 1/2 Oat Bran and 1/2 oatmeal)
1 tbsp. baking powder
1 c. fruit (be creative) apple, banana, rhubarb
1/4 c. nuts
1 tsp. vanilla

Blend all together. Pour into muffin tins. Bake at 400 degrees for 20 minutes.

(When you use fresh fruit mix the milk, egg whites, oil and fruit in a blender. Add to dry ingredients.)

With apples, add 1 teaspoon cinnamon.

This is a good muffin to help reduce cholesterol.
