CHEESE SOUFFLE 
8 slices sandwich bread (remove crust)
1/2 lb. slices Old English cheese
4 eggs
2 c. milk
1/2 c. melted butter (or less)
Salt to taste

Place 4 slices bread in bottom of greased dish. Lay slices of cheese on bread. Lay second slice of bread on cheese, then cheese. Beat eggs lightly, add milk and melted butter. Pour liquid over bread and cheese. Let stand overnight in refrigerator. Take out 1 hour before baking and bake 1 hour at 350 degrees (reduce heat if souffle browns too fast).
