CHEESE SOUFFLE 
8 strips bacon, diced
4 green onions and tops, diced
8 eggs, slightly beaten1 c. milk
1/4 tsp. seasoned salt
1 (8 oz.) pkg. shredded Monterey Jack or Cheddar cheese

Fry bacon and drain; saute onions in drippings. Combine eggs, milk and salt. Stir in bacon, onions and about 3/4 of the cheese. Pour in buttered souffle dish and bake at 350 degrees for 35 minutes. Top with remaining cheese and bake for 5 minutes more.
