CHICKEN OR TURKEY CHOW MEIN 
1 c. onion, diced
4 c. roasted chicken or turkey
1 c. chicken broth
1 1/2 c. green pepper, chopped (opt.)
1 1/2 c. celery, chopped
2 tbsp. cornstarch
3 tbsp. soy sauce
1 can chow mein vegetables
1 can water chestnuts, diced
1 sm. can sauteed mushrooms
1/4 c. slivered almonds (opt.)
1 jar pimento

Combine onion, green pepper, celery and chicken broth; cook. Add remaining ingredients (except poultry) and thicken with cornstarch. Add poultry carefully. Heat thoroughly and serve on chow mein noodles. Serves 6 to 8.
