PARMESAN CARROT CASSEROLE 
20 med. carrots
Salt & pepper to taste
1 1/2 c. grated Parmesan cheese
1 tsp. sugar
1 1/2 pts. heavy cream
1 lg. onion, grated

Boil carrots in salted water with 1 teaspoon sugar for about 20 minutes. Drain and put through food processor. Stir in cream, cheese, salt and pepper. Pour in 9 x 13 inch greased casserole. Spread onion over top. Bake at 350 degrees for 50 to 60 minutes. Serves 12 to 14.
