YOGURT WAFFLES 
1 1/2 c. whole wheat pastry flour
1/2 c. unbleached white flour
1 tsp. baking powder
1/2 tsp. salt
2 eggs, separated
1 c. yogurt
1 c. milk
4 tbsp. safflower oil or melted butter

Butter and maple syrup for garnish.

Oil waffle iron well. Heat iron about 8 minutes or until a test drop of batter sizzles. Combine dry ingredients. Beat egg yolks in another bowl. Add yogurt, milk, and oil. Mix well. Whip egg whites to soft peaks.

When iron is hot, pour liquid ingredients into flour mixture. Mix gently until well incorporated, but do not beat. Fold in whipped egg whites. Spoon batter onto hot waffle iron and bake until golden. Serve waffles and garnish with butter and maple syrup. Serves 4.
