2 1/2 c. flour 1/2 c. wheat germ or bran 1 tbsp. 2 tsp. baking powder 1 tsp. salt 1 tsp. sugar or Splenda 2 1/4 c. milk 4 eggs 2/3 c. oil Sift and mix well the dry ingredients; set aside. Measure milk. Separate eggs; put yolks in milk and whites in separate bowl to beat stiff. (Any yolk in the egg whites will keep them from forming stiff peaks.) After beating the egg whites, use the mixer to mix the milk and eggs, then put into flour mixture and mix well. Then add the oil and mix. Fold the egg whites into the mix. Do not overmix after adding egg whites. Bake in waffle iron 2 minutes each. Yields approximately 10. You may use all flour, but adding fiber makes these waffles "stick to your ribs." |
