MARINATED CUCUMBER SALAD | |
1 c. Italian-style cooking sauce 1 c. vinegar 1 c. sugar 1/2 c. salad oil 1/4 c. water 2 tsp. salt 1/4 tsp. black pepper 6 carrots, sliced (3 c.) 2 med. cucumbers, sliced (1 1/2 c.) 1 sm. green pepper, cut in rings 1 med. onion, sliced and separated into rings In large bowl combine cooking sauce, vinegar, sugar, salad oil, water, salt and pepper. Stir in carrots, cucumbers, green pepper rings, and onion to coat. Cover; refrigerate several hours or overnight stirring occasionally. Drain, refrigerating marinade for use another time. Serve in lettuce lined bowl. Use as a salad, condiment or vegetable. Note: I always use MORE cucumbers (5 or 6). |
