ZUCCHINI & TOMATO CASSEROLE 
1 zucchini, grated, not fine
1 tomato, sliced & peeled
Grated Swiss cheese
Fine grated Parmesan cheese
French bread crumbs, sauteed in butter
Salt
Pepper
Oregano
Parsley
Sweet basil

Put sliced tomatoes in bottom of buttered baking dish (shallow). Mix 3/4 zucchini shreds with Swiss cheese and layer on top of tomatoes. Mix rest of zucchini with buttered crumbs and Parmesan cheese. Layer on top after seasoning. Swiss, zucchini, layer with salt, pepper, oregano and parsley. Sprinkle top with sweet basil and dot with butter. Bake 30 to 45 minutes at 350 degrees.
