BLACKBERRY FETA ARUGULA SALAD W/
PEACH BASIL DRESSING
 
SALAD:

1 cup whole blackberries
8 oz. feta cheese crumbles (or cut into 1/4-inch cubes)
1 1b. arugula, washed and stemmed

PEACH BASIL DRESSING:

1/2 fresh peach (pitted)
4 fresh basil leaves
1/4 cup rice wine vinegar
1/4 cup salad oil
sea salt and freshly ground pepper, to taste

Combine salad ingredients.

For dressing, in a food processor, process peach with basil, vinegar and oil until emulsified. Season with salt and pepper, to taste.

Toss salad with dressing. Serve immediately.
