COCONUT MACAROONS 
2 egg whites
Dash of salt
1/4 tsp. vanilla
2/3 c. sugar
1 1/2 c. flaked coconut

Beat egg whites, salt, and vanilla until soft peaks form; gradually add sugar, beating until very stiff and glossy. Fold in coconut and drop by rounded teaspoon, about 2 inches apart, onto a greased cookie sheet. Bake at 325 degrees about 20 minutes or until set and lightly browned. Makes about 2 dozen.
