FRESH COCONUT MACAROONS | |
4 egg whites 1 tsp. vanilla extract 1 c. sugar (confectioners') 2 c. flaked coconut 1/2 c. all-purpose flour Beat egg whites with electric mixer until stiff peaks form. Add vanilla; mix well, add sugar, gradually, beat well after each addition. Beat until stiff and glossy. Put in coconut and flour; mix well. Drop from teaspoon onto buttered and floured pan sheet. Bake at 350 degrees for 25 minutes or until lightly browned. Yield: 2 dozen. |
