COCONUT MACAROONS 
2 egg whites
Dash salt
1/4 tsp. vanilla
2/3 c. sugar
1 1/2 c. flaked coconut

Preheat oven to 325 degrees. Beat egg whites, salt and vanilla until soft peaks form. Gradually add sugar, beating until very stiff and glossy. Fold in coconut and drop by rounded teaspoons about 2 inches apart onto greased cookie sheet. Bake 20 minutes or until lightly browned and set. Makes about 2 dozen.
