COUSIN BESSIE'S COCONUT MACAROON
PIE
 
1 1/2 c. sugar
2 eggs
1/2 tsp. salt
1/2 c. soft butter
1/4 c. flour
1/2 c. milk
1 1/2 c. shredded coconut
1 (9 inch) pie shell (unbaked)

Beat sugar, egg, and salt until lemon colored. Add butter, flour, milk. Fold in coconut. Pour into unbaked pie shell. Bake on a lower rack of oven for 1 hour at 300 to 325 degrees.
