ANTIPASTO SALAD 
1 head Romaine or leaf lettuce, cleaned & torn
1/2 head Iceberg lettuce, cleaned & torn
2 cucumbers, peeled & sliced
2 c. cherry tomatoes (halved) or plum tomatoes (quartered)
1 sm. red onion, thinly sliced
1 can black olives, drained
1 yellow sweet pepper, chopped
12 oz. Provolone or Monterey Jack cheese, cubed
8 oz. hard salami or pepperoni, cubed
8 oz. cooked ham or prociutto or capicola, cubed
Favorite Italian dressing or oil/vinegar to taste

Combine all ingredients in very large bowl. Top with favorite Italian dressing or oil and vinegar. Chill and serve with crusty Italian bread or bread sticks.

Optional: Tuscan or cherry peppers (drained) may also be added, if desired.
