ARTICHOKE SQUARES 
2 (8 oz.) jars marinated artichoke hearts
1 sm. onion, chopped
1 clove garlic, minced
4 eggs
1/4 c. bread crumbs
Salt and pepper
1/2 lb. sharp cheddar cheese, shredded
2 tbsp. minced parsley

Drain marinade from artichokes, measuring out 2 tablespoons into a skillet. Saute onion until golden; cool. Chop artichokes.

In a bowl, beat eggs, then add crumbs and salt and pepper. Stir in cheese, parsley, artichokes and cooked onion; mix Turn into greased 7x9 inch pan and bake 30 minutes in 325 degree oven. Cool and cut into squares.
