ZITI WITH CHICKEN AND BROCCOLI 
3 large, boneless chicken breasts
1 bunch broccoli
1/2 cup olive oil
2 garlic cloves, chopped
1 shallot clove, chopped (optional)
salt and pepper, to taste
1/2 lb. ziti
1 tbsp. unsalted butter
1/2 cup freshly grated Parmesan cheese

Cut chicken into cubes. Cut broccoli into flowerets. Heat 1/4 cup oil in a large skillet over medium heat. Saute the chicken with the garlic, shallot, salt and pepper until lightly browned.

Using a slotted spoon, transfer the chicken to a large platter. Add the remaining 1/4 cup of olive oil to the pan (if needed). Add broccoli flowerets; stir-fry for about 5 minutes. Add the chicken; toss lightly, then remove from heat.
