CHEESY CHICKEN WITH BROCCOLI 
1 1/2 lb. boneless chicken breast, cut into 1/2-inch cubes
1 can chicken broth
2 c. uncooked macaroni
3/4 lb. Velveeta cheese, cut in 1/2-inch cubes
1 (10 oz.) pkg. frozen broccoli

Spray a large skillet with nonstick spray. Add the chicken and cook over medium heat until lightly browned. Stir in the chicken broth and bring to a boil. Stir in the macaroni and reduce heat to a medium boil. Cover with a lid and let simmer 10 minutes or until macaroni is tender. Add the broccoli and cheese. Stir until cheese is melted.

Serves 6.
