CHEESY BROCCOLI SOUP | |
1/4 c. chopped onion 1 tbsp. butter 1 1/2 c. milk 3/4 lb. Velveeta cheese, cubed 1 (10 oz.) pkg. frozen chopped broccoli, cooked and drained Dash ground pepper In a 2 quart saucepan, cook onions in butter until tender. Add remaining ingredients; stir over low heat until cheese is melted and mixture is hot. Serves 4. OR MICROWAVE: Microwave onions and butter in 2 quart casserole or bowl on high for 30 seconds to 1 minute or until onions are tender. Add remaining ingredients; mix well. Microwave on high 6-8 minutes or until thoroughly heated, stirring every 3 minutes. OR TO SERVE 25-30 PEOPLE: 1/2 cup servings each. Quadruple the ingredients, use 3 or 4, 2 pound (32 ounce) Velveeta cheese and 1 1/2 bags chopped, cooked frozen broccoli, add other ingredients, follow ingredients per cooking. |
